Polymock Ether Signet bug?
How is it that if polymock ether signet were interrupted that the opponent still can use another skill right after getting interuptted for gaining 10 energy since you need to be 0 energy to use polymock ether signet, therefore if you interrupt polymock ehter signet, they should not have any energy until the signet are recharge and can be use again to gain 10 energy, right?

There isn't a way to interrupt it. It is a signet, and ALL of the interrupts for Polymock are for spells only.

Even if your opponent was doing NOTHING you can cast the interrupt and nothing will happen. The Ether Signet cannot be interrupted at all. Only a knockdown would interrupt it, but there are no knockdowns in Polymock. Just save your interrupt for a SPELL or Glyph, it will interrupt either of those, as it says in the description. If you read the skill descriptions, it tells you what they do.
